Is this legally sufficient?

It is a template. It is not legal advice and it cannot know your circumstances. For a site with analytics and a contact form it is usually a reasonable base; for anything handling health, financial or children data, get professional review.

Do I need a privacy policy at all?

If you use Google Analytics or serve ads, yes: their terms require one. Under GDPR, any processing of personal data requires disclosure, and an IP address in a server log counts as personal data.
